Baby, It’s cold outside: Soup season

It’s been cold, cold here in California and I have been wrapped up in blankets (yes, plural) and enjoying my coffee and fireplace. I know, for my East Coast Squad members, you are smirking your lips and saying, “You don’t know what cold is”, but baby, this California winter has been serving some chill. To combat the chill, I tried a new soup recipe, and it is to die for. Ok, maybe to live for. Words are important. I don’t know about you guys, but I love tacos. I mean, like really love tacos. Taco Tuesday is not just a saying for me. If my family would go for it, I would have tacos every Tuesday and the leftovers the next day. Lol!

Anyhow, in this season of decreasing temperatures, soups are comforting. To keep the Tuesday tradition alive and to have some variety, I searched for taco ideas and I stumbled across a soup recipe that was perfect. Taco Soup. I didn’t know it was a thing but was willing to give it a try. I hope you will too. I modified the recipe a bit to fit my liking and to create a recipe that is leaner. The fam was fully pleased (pun intended).

Taco Soup

Ingredients:

Instructions:

Dice one medium onion and sauté in pot with olive oil. Once the onions are slightly translucent add ground turkey to the pot with taco seasoning pack to brown. Ensure that ground turkey is cooked thoroughly. Once ground turkey is cooked thoroughly, add the remaining ingredients, and stir. If you want to add a little heat, consider red pepper flakes or opting for a salsa that is spicy. Bring soup to a boil (stirring occasionally to ensure that it does not stick) and then simmer for 30 minutes.

While the soup is cooking, prepare your garnishes (i.e., shred cheese, dice vegetables, and cube avocado)

In about 50 minutes, you will have a nice, cozy, tasty, Taco Tuesday Soup. My hope is that you will have leftovers because you will love this soup recipe and will want more.

Lastly, in the spirit of the food we love and promoting self-care, “What’s your favorite food?” One of mine is tacos. Yes, tacos are self-care for me. Remember, self-care is customized to fit you. I get to choose the self-care that suits me and you can do the same. Trying new recipes falls under the category of intellectual self-care. In trying recipes, you are challenged to follow instructions (tweak and twerk if you like) and challenge your taste buds and pallet.
